SERVES 6
Ingredients:
- 750ml bottle of De Bortoli Rosé Rosé
- 1 orange, halved
- 375ml clear apple juice
- 55g caster sugar
- 1 tsp vanilla bean paste
- 4 whole cloves
- 2 cinnamon sticks or quills
- 3 whole star anise
- 125ml cherry brandy or Grand Marnier
- 1 small Pink Lady apple, very thinly sliced
Method:
- Use a vegetable peeler to peel 4 strips of rind from 1 orange half, avoiding white pith, then juice the half. Chop the remaining orange half.
- Place orange rind, orange juice and chopped orange in a saucepan. Add De Bortoli Rosé Rosé, apple juice, sugar, vanilla, cloves, cinnamon and star anise. Place over medium heat and bring to a simmer. Reduce heat to low. Cook for 5 mins or until aromatic. Remove from heat.
- Add brandy or Grand Marnier and apple and stir to combine. Divide among serving glasses. Serve immediately.
