SERVES 1
Ingredients:
- 45ml De Bortoli Prosecco
- 30mL Vodka
- 30mL Green Apple & Earl Grey Syrup
- 20mL Lemon Juice
- 4 drops Wonderfoam
- Garnish: Atomised Thyme Bitters
Method:
- Add all ingredients to a shaking tin except De Bortoli Prosecco.
- Dry shake well (without ice).
- Now add ice and shake again.
- Double strain into a highball style glass.
- Now add De Bortoli Prosecco and some ice cubes to bring washline to top of the glass.
- Garnish with atomised thyme bitters.
- Enjoy immediately!
To make the Green Apple & Earl Grey Syrup:
Ingredients:
- 130g Green Apple
- 130g White Sugar
- 170mL Water
- 2 Earl Grey Tea Bags
Method:
First remove the core and slice the apple into strips. Add all ingredients to a saucepan and bring to the boil. Once the apple has completely softened and started to break down, remove syrup from heat and allow it to steep until fully cooled. Remove tea bags and blend. Strain syrup through a fine strainer and store in the refrigerator for later use.
