Enticing aromas of citrus zest, peach and bush honey with a wisp of quince and sweet vanillin oak.
Palate
Layers of botrytis flavours such as cumquat, citrus and a rich blend of stone fruits, accompanied by attractive French oak and finishing with a slight touch of refreshing acidity.
Vintage Conditions
The year began with mild temperatures, showers of rain and high humidity. Ideal conditions for botrytis but much too early. Following dry conditions, the botrytis infection moved slowly until after Easter when the early morning dews gave the botrytis the required moist and humid conditions. Harvest began late April and was finished in mid May. Botrytis fruit was picked at 18-23 baume across various vineyards depending on the combination of flavour and sweetness.
Winemaking
De Bortoli have established a number of Semillon vineyards over the years from
which the fruit is sourced for this sweet, delectable wine. Fermentation occurs over 4-8 weeks with each vineyard kept separate to enhance the individual characteristics.

"Never discovered great dessert wine? Here’s your ticket. De Bortoli set the standard for the finest botrytis semillon in the country with Vat 1, then established the benchmark for value in Vat 5. The 2007 made such a storm that I could not imagine that it could be replicated. But here it is, in its unctuous layers of golden syrup, honey, marmalade, glacé fig, butter on toast and crème brûlée. Acid balance is soft and supportive and the length is astonishing. Real dessert wine at an imposter’s price!"
