Winemaking
The wine is naturally fermented in old French casks using indigenous yeasts with a little stirring of lees at the end. The wine is pale, textural and delicious - perfect for summer drinking or as an aperitif all year round.

"I fell for the art deco-inspired design in a flash. We swooned over the bottle's elegance and femininity. I imagined enjoying it with a picnic, sprawled next to a bubbling brook in dappled sunlight in a clover field in French countryside. The colour sung to me in deep blushing rose tones. It looked the part in every sense. To drink, the drop was hosed with floral kicks and notes of dry glasses and immature berries. Enjoy it well chilled with seared scallops in a creamy bisque."

Winemakers Leanne De Bortoli and her husband Steve Webber have been at the vanguard of Australia's ''rose revolution''. This superb drop, named after the Yarra Valley's legendary opera diva Dame Nellie Melba is, to excuse the pun, right on song. It's bone dry with lovely red berry fruit, savoury notes and can be paired with almost anything.

Chilled, dry, pale rosé can be addictive in a big way this time of year. This very European-inspired style has delicate pinot noir aromatics (boosted by the minor addition of pinot gris), juicy strawberry-like flavour with a definite savouriness and slight nutty character that compliments the overall textural feel. Delicious drinking and just made for fun in the sun, yet it’s not at all frivolous. Get on it.
