Elegant and fruit driven in style with fresh acid and length of flavour. A hint of subtle oak gives the palate texture and weight.

Vintage Conditions

The lead up to vintage 2010 saw quite mild growing conditions and some rainfall. The rain abated for half of vintage, January through to middle of February with disease pressure being very low during this time. January and February night temperatures were quite mild allowing fruit to ripen and retain good acidity.

Winemaking
Fruit classification in the Riverina was based on those vineyards showing flavour expression characteristic of sacred hill quality. Healthy berries profiling clean citrus and floral flavours. Fruit from the King valley was also sourced to give further fruit weight and intensity. Largely, cool, slow fermentation in 100% Stainless Steel to retain primary fruit characters. Yeast was specifically selected to enhance and retain aromatics.  Ex Noble One French oak barrels were used to ferment a small portion of juice for added complexity. The older oak giving a delicate structure to the wine as well as complexity. 6% of blend spent 4 weeks in old french oak barrels.

Alc/Vol: 11.50 %   pH: 3.22   TA: 6.93 g/L

Cellaring
Excellent drinking upon release and will look smart for two years thereafter.

Grilled Snapper with Gremolata. Or if you’re adventurous, deep fried White Bait with Fennel Seed Aeoli.

A major surprise. Not only does the wine have clear-cut lime and lemon varietal flavour, but places no reliance on residual sugar, the finish dry. I'm not about to carp by questioning the phenolic notes.
