Winemaking
Fruit is picked very ripe and the base wine is fermented to 10º Baumé then fortified to halt fermentation, retaining the wine’s natural sweetness. The desired flavour profile was achieved by identifying the most suitable parcels of wine during fermentation and blending these back with aged tawny material which has been matured on oak. A combination of American and French oak is used.

Cellaring
The wine has been aged on oak and is designed for current consumption but will keep in the bottle for several years.
