Region
Victoria (predominantly Yarra Valley)
Appearance
Delicate translucent pink
Bouquet
Fragrant aromas with strawberry notes
Palate
This delicate sparkling wine shows lovely fruit complexed by creamy biscuity flavours and finishing with crisp acidity.
Vintage Conditions
This wine is a multi vintage blend with some components ageing on yeast lees in bottle for up to seven years. The Pinot Noir is from the Yarra Valley which has the ideal climate for growing premium sparkling wine fruit. The Chardonnay is selected for its capacity to add body to this traditional sparkling blend.
Winemaking
Produced using two methods for sparkling wine production. The Pinot Noir is produced using the Transfer Method and the Chardonnay via the Charmat Method. Both these techniques contribute to the complex aromas and creamy texture of the wine. A small percentage of the wine has undergone malolactic fermentation to give the wine added complexity.

"A simple and well-made wine for the price, offering the structure and style you want with value-for-money bubbles."
Ray Jordan, The West Australian - Top 100 Wines, December 2011

"Good mousse, and salmon-pink colour; obvious care in selection of base wine, most from the Yarra Valley; the strawberry fruit notes are, of course, pinot-derived, backed up by citrussy acidity."
James Halliday, Australian Wine Companion 2011, August 2010

"One of the most sophisticated bottles of bubbles under $15, this is an elegant, restrained, savoury sparkling with a gentle salmon hue and a bone dry finish. Don't let the price fool you: this is a wine to pour with salmon and oysters and never nuggets and fries"

"In typically De Bortoli fashion, over-delivers at its price point; it is a multi-vintage with components ageing on yeast lees in bottle for up to seven years, and a small portion is taken through malolactic fermentation. Good mousse, and salmon pink colour; obvious care in selection of base wine, most from the Yarra; the strawberry fruit notes are, of course, pinot-derived, backed up by citrussy acidity."
James Halliday, Weekend Australian, November 2009
"Youthful, nutty, yeasty nose with subtle strawberry notes which become more obvious on the refreshing palate."
, Winestate, Champagne & Sparkling Tasting, November 2008
"A fresh and quite lively fizz with some subtle cherry and strawberry tones. It's slightly pink from the pinot influence. Nice clean crisp finish and value for money."
Ray Jordan, Top 100, The West Australian, November 2008
"Very pale pink blush, subtle strawberry and blueberry flavours, a touch austere and fading quickly."
Graeme Phillip, Hobart Mercury, December 2007
"This shows some distinct mature toasty chardonnay on the nose and some subtle rose colour from the pinot. It's flavoursome with plenty of length. Good for food."
, West Australian, November 2007
"This colums has previously raised the value that can be found in Australian sparkling wines, and the Windy Peak is no exception. A fair guide is that fruit from one of Australia's most respected sparkling regions, the Yarra Valley, has been used in this wine. This is a multi-vintage blend, with its bronze colour and complexity reflecting some aged characters. Even so, it is both fresh and refreshing."
Mike Burnett, Launceston Examiner, January 2007
"Complex and creamy with strawberry flavours, integrated biscuity characters and a crisp, clean finish."
Kerry Skinner, Illawarra Mercury, November 2006
"From De Bortoli's Victorian range comes a very good bubbly: delicate pink tinge (what the wine buffs used to call 'partridge eye'), hint of raspberry, lively flavours, creamy texture, crisp zingy finish. For the fun times.GOOD."
Peter Forrestal, Quaff, December 2005
"Smells of fresh strawberries with hints of quince. Nicely structured creamy palate developing complexity."
, Winestate, Style Tastings, November 2005
"A delicate sparkling wine with fragrant cherry-like tones balanced with yeast autolysis and elegant fruit flavours."
Kate McCarthy, Liquor Watch, October 2005
