Appearance
Pale Straw with green hues.

Bouquet
Fresh stone fruit is balanced with a hint of nutty oak.

Palate
This fruit driven wine with crisp acid has been enhanced by lees stirring giving a great texture and balance to the mid palate. The subtle oak approach has given added structure to the wine without overpowering it leaving the stone fruit flavours to dominate.

Vintage Conditions
The lead up to vintage 2010 saw quite mild growing conditions and some rainfall. The rain abated for half of vintage, January through to middle of February with disease pressure being very low during this time. January and February night temperatures were quite mild allowing fruit to ripen and retain good acidity.

Winemaking
Fruit classification was based on those vineyards showing flavour expression characteristic of sacred hill quality. Healthy berries profiling melon and stone fruit  were ideal for this wine style. This wine was fermented cool over a two week period. Selected parcels were fermented with the inclusion of American and French oak staves.

Alc/Vol : 12.5%   pH : 3.39   TA : 6.06 g/L

Cellaring
This wine is made for immediate consumption however can be cellared for up to two years.

Suggested Cuisine
Perfect with pan fried tuna with pomegranate jus. Or if you’re adventurous, bugs with burnt butter sauce.
