This is preserved during winemaking with gentle, low intervention techniques to produce wine with varietal detail and purity.
Tight, lean complex citrus fruit with barrel ferment complexity and nutty undertones. The palate is textured and elegant with a long, balanced finish. 'Just gorgeous' The palate is minerally and tight with nuanced varietal characters and a gentle phenolic grip. Displays smoothness, structure and texture, finishing with length and balance.
The palate shows texture and freshness from extended time on lees. Slight citrus notes add freshness to the restrained palate, finishes with lovely length and balance.
A modern style of Cabernet with a fine detailed palate, bright ripe cassis fruits, layered texture, structure, fine grained tannins, balance and excellent length of flavour. Elegant Pinot Noir aromas of red currants, cherry and raspberry with subtle spice and forest floor characters. Medium bodied with gentle palate defining tannins and terrific texture.
Restrained aromas of red berries, musk and rose petal lead to a smooth, dry palate with texture and structure, low acidity and savoury earthy finish.
Full, well structured palate with ripe berry fruits, cracked pepper and subtle oak. The small addition of Viognier contributes complexity, whilst maintaining tightness and detail.
