Deep purple with crimson hues.
Bouquet
Fragrant cassis, ripe plum and licorice with hints of mint and subtle cedary oak.
Palate
Rich black fruits and sweet plum with fine grain tannins and well integrated oak results in a soft generous wine.
Vintage Conditions
Winter rainfall in 2009 was above average, giving good soil moisture levels for budburst in early spring. Favourable conditions continued during spring with minimal frost allowing for excellent vine canopy development and fruitset. During November, much of South Australia experienced a protracted ‘hot spell’. However, most vineyards were spared from damage as bunch development was still at an early stage. Due to the above average summer temperatures prior to vintage, ripening was accelerated with harvest beginning 10 days earlier than usual. Cabernet Sauvignon exhibits the benefit of slow maturity, ripe seeds, and rich tannins.
Winemaking
Fruit was selected by the winemaker and picked when both flavour and Baume were optimum. Fruit was cold soaked and fermented at 25-32°C for an averaged 7 days.

Deep garnet colored, the 2009 Deen Vat 9 Cabernet Sauvignon has pronounced notes of warm cassis, pencil shavings and hung meat. Medium to full-bodied, it gives plenty of ripe black currant flavors with crisp acid and a medium level of grainy tannins, finishing medium-long. Drink it now through to 2015.
