Appearance
Very pale light straw colour with vibrant green tinges.
Bouquet
Very fragrant aromas typical of our Riesling.
Palate
The palate shows texture and balance. Balance being the key with this style of wine. A slight lick of residual sugar help maintain balance with the crisp acid backbone. The palate is harmonious with flavours of pears and apples. The finish is clean and long.
Vintage Conditions
The 2009 – 2010 growing season saw our earliest bud burst for sometime. Timely rainfall received in early summer gave the vineyard some relief from a dry winter and spring. Conditions for ripening were ideal with warm days & cool nights. Fruit was hand picked on a ‘bloody cold’ morning.
Winemaking
The fruit for this wine is entirely sourced off the Dixon’s Creek property. The average age of the vines is 18 years old. The vines were cane pruned to an arch cane trellis system. This helped to protect the fruit zone and preserver freshness in the berries. The fruit is entirely hand picked in the cool of the morning. Fruit is destemmed and gently pressed. Cold settlings for 24 hours and the raced and inoculated with a selected yeast strain. Here it is allowed to complete fermentation until the balance of acidity, sweetness & extract felt right. The wine was then sulphured to stop the fermentation. Stabilised and bottled.

Cellaring
This wine can be enjoyed now, but will reward those who are patient. Cellaring should be carried out in a good cellar.
