Region
Yarra Valley, VIC
Appearance
Pale colour with green tinges.
Bouquet
Showing subtle biscuit-like aromas with citrus and white pear characters.
Palate
Soft creamy textured palate with length and drinkability.
Vintage Conditions
Vineyards are selected for fruit subtlty and finesse. On the valley floor these are generally East through to South facing slopes and in the upper Yarra the aspect is not so critical.
Winemaking
Fruit is whole bunch pressed to avoid colour and phenolic pickup. The juice is racked to barrel and tank and fermented at warm temperatures to ‘blow off’ the fruitiness. The wine is allowed to complete natural malo lactic fermentation and sits on lees for 14 months before secondary fermentation and bottling.

"This is the white version of the excellent rosé style. It's blanc de blancs which means it is from white grapes. Textured and soft, it has been deliberately made to a style for easy current drinking. Works for me."
Ray Jordan, The West Australian - Top 100 Wines, December 2011
"Pale straw in colour with green tinges, this delightful Yarra Valley sparkling is set to impress even the most discerning palate. A subtle bouquet of biscuit-like aromas with citrus and white pear partner a soft, creamy textured palate with length and drinkability."

"Produced from 100% Chardonnay, the NV Rococo Blanc De Blanc has a moderate intensity of peach blossom, lemon curd and jasmine aromas with a whiff of mandarin peel. Light to medium bodied, dry and crisp with a touch of sweetness to balance (10.6 grams / liter of residual sugar), it has a good amount of medium sized bubbles and a medium-long, straightforward finish."

"Food match: Oysters
Sparkling wines at this price point are often one-dimensional but this
new offering from De Bortoli has layers of complexity. Made from
chardonnay grapes, this is crisp, dry and refreshing, with nice yeast
and apple scents. On the palate are citrus flavours with hints of toast
and a nuttiness that adds to the wine?s complexity. There?s also a
Rococo rosé that?s great value and worth checking out."
Ben Thomas, The Weekly Review, December 2010
"There are few better-priced and classy wines on the market than this. Pure chardonnay gives a wine that radiates fineness from every pore, with restrained fruit and subtle yeasty nuances balanced with brisk acidity."
Angus Hughson, The Australian, November 2010
"Fruit from De Bortolis Rococo Blanc de Blanc is sourced from the Yarra Valley, where it is whole bunch pressed and the juice racked to barrel and tank and fermented at warm temperatures. The wine is allowed to complete natural malolactic fermentation and sits on lees for 14 months before secondary fermentation and bottling, resulting in a soft and creamy textured palate with length and drinkability."

"This non-vintage blanc de blancs is likely chardonnay-driven, although the exact blend of white grapes couldn't be found. Apple, mineral, peach, perfume and light doughy notes drive the aromas. Those crisp red apple notes are fleshed out on the palate by vanilla and peach notes. Pear and flint notes come through on the medium finish — the Rococo shows great finesse for the price."

"Of course, it also needs to taste good, and the De Bortoli Rococo Blanc de Blancs sure does. It's fresh and fluffy (yep, I'll stand by that), but it has lots of baked bread flavours, too. And the packaging is spectacular"

"Sophisticated and delicate, this is the bargain bubbles that we've all been wishing for for years. Extended lees contact has blessed it with great texture and restraint, with earthy, yeasty complexity riding under its complex lemon and dried fruit flavours."

"A new label from De Bortoli's Yarra Valley winery, it's a youthful, fruit-led, chardonnay-driven bubbly with persistence, fine acidity and a clean finish. Young and simple but pristine with some pretensions to serious quality. Best within two years."

"Rococo Blanc de Blancs is De Bortoli's cheeky new Yarra Valley fizz. Maker Steve Webber says they were looking at a complex blanc de blanc style with a bit of character and plenty of giddy-up. Here it is."
