Winemaking
Fruit is left on the vines to become very ripe before harvesting at 16-18 baume. Once harvested the fruit is crushed, partially fermented then fortified on skins to further extract the floral and aromatic flavours from the fruit. The wine is pressed off skins and then transferred to barrels for maturation.

"Deep brown in color with a slight green tinge to the rim, the NV Show Liqueur Muscat gives moderate to intense aromas of mashed raisins, prunes, fruit cake, roasted hazelnuts and a whiff of coffee. Incredibly sweet (228 grams per liter of residual sugar) and rich, it is well balanced with very crisp acid and finishes long, but is a little simple."

"More cooked fruit; golden and burnt toffee. A slight oiliness to the aroma. Terrific sweetness on the palate, doesn't have that lusciousness or varietal flavour but beautiful toffee, mocha, caramel and syrup flavours."

Plent of rancio and drying elements on the nose together with varietal perfume. Well balanced, although dry on finish

"Puds as intense as the mont blancs need an equally sweet, punchy wine and Australia's luscious, caramel and raisin-licked De Bortoli Reserve Show Liqueur Muscat is one that can cope."
Jane MacQuitty, The Times, April 2010
