Deep, bright red
Bouquet
Intense, red berries and remarkable depth of flavour with layers of complex fruits and spices. Classic red Burgundy.
Palate
Powerful but not at all overdone. Long and fine but still very much in its youth. Red and dark fruits, earth, forest floor and spice.
Vintage Conditions
One of the great vintages of the past 30 years. An unusually low stress vintage for Burgundy. Mild conditions through the end of August and into September produced fruit of outstanding quality.
Winemaking
Fruit was hand harvested from 75 year old vines. Each bunch was carefully hand sorted and any damaged bunches discarded. The remaining bunches were then entirely destemmed and transferred by gravity to open fermenters. The winemaking process is identical to our Pinot Noir wines made in the Yarra Valley. Fermentation proceeded naturally and without use of temperature control. After 21 days maceration the wine was drained to tank and the skins pressed. All of the press wine was retained. The clear wine was then racked by gravity to barrel. Malolatic fermentation was allowed to proceed naturally and was completed after 4 months. Aged for 12 months in French oak casks - 75% new, the balance 1 year old. The wine was then racked and bottled in France.
