First created by Darren De Bortoli at the family winery in Bilbul in 1982, Noble One has gone on to be one of the most awarded wines in history, garnering more than 130 trophies and 406 Gold medals both nationally and internationally.

2012 marked 30 years since Darren first introduced Noble One to the world. Incredibly it has maintained its position as Australia's benchmark dessert wine ever since.

Noble One Ice Cream

 

500gm cream

500gm milk

8 egg yolks

200gm castor sugar

1 vanilla bean

250ml Noble One

 

Combine the vanilla, milk and cream and heat to infuse the vanilla. Do not boil. Cream the sugar and egg yolks in a bowl and whisk in the hot cream/milk mix. Return to the pot and cook gently, stirring constantly until the mix reaches 80 degrees. Pass through a sieve and cool over an ice bath. Leave overnight, add the noble one and churn.

Hazelnut Budino with Salted Caramel Sauce

 

250g Gianduja*

250g butter

1 large tbsp hazelnut paste

200g plain flour

6g baking powder

5 eggs

3 egg yolks

100g sugar

400g cream

200g castor sugar

50g butter

1½ tsp salt

 

Over a bain marie melt gianduja. When soft and smooth add butter and hazelnut paste. Melt and mix until smooth. Keep warm. While melting gianduja, whip eggs, yolks and sugar in an electric mixer on high until light and fluffy (will take approx 10 minutes). Spray 10 metal rings with canola oil. Cut baking paper to fit inside rings, then line rings. Sieve dry ingredients into gianduja and mix. Carefully fold in egg mix. Pipe into moulds and set in fridge for at least one hour. Bake at 220ºC for approx 14 minutes. Serve with caramel sauce and your favourite ice cream. For the salted caramel sauce, heat cream until just before boiling. In a clean pan, dry caramelise the sugar to a medium caramel, do not make it too dark as you will end up with a bitter sauce. Add in the cream a little at a time until incorporated, be careful as it may spit. Whisk in the butter and salt and then cool. 

* Gianduja is a sweet chocolate which contains about 30% hazelnut paste and can be purchased at good quality food stores.
