Estery lifted lime bouquet with a minerally lemon/lime undertones

Palate
Crisp, dry and fresh. Tight and minerally with long lemon flavours. Delicate but mouthfilling, with balanced acidity lending length.

Vintage Conditions
2007 was characterised by dry weather during spring and summer. Warmer temperatures were experienced during early summer and this enabled opportune ripening of fruit. Fruit was harvested once optimal maturity was reached.

Winemaking
Fruit is sourced from our 40 year old Murphy’s vineyard on Wilderness Road. All fruit is hand harvested and transported to the winery for pressing immediately. The juice is roughly racked off heavy sediment and innoculated for ferment. After a short settling period, the juice is roughly racked and innoculated with a selected yeast strain for fermentation in stainless steel. Once the wine has finished fermentation, it is fined and filtered ready for bottling.

Alc/Vol : 11.5 %   pH : 3.13   TA : 5.4 g/L

Cellaring
This wine is made for immediate consumption, however, will continue to develop complexity with further ageing in an appropriate cellar.

Suggested Cuisine
Enjoy with fresh foods. Try with freshly shucked oysters, classic fish and chips or fresh garden salad.
