Winemaking
Selected parcels of fruit from premium wine growing areas were harvested in excellent condition and gently pressed to retain varietal character and freshness. Winemaking techniques included fermentation with solids as well as cool & warm fermentation. These techniques improve texture and softness without sacrificing varietal expression.

Cellaring
For immediate enjoyment. The wine will
however, continue to soften and develop more complexity over the next 2 years.

"...here in the good ol' USA we make a ton of bubbly. From California to New Mexico to Virginia to Massachusetts, there are American Sparkling Wines from sea to shining sea. So what do you call a sparkling wine from Australia? Delicious that's what! While not exactly known for making bubbly (or even Sauvignon Blanc for that matter), the Aussie's are the new kids at the party but they're doing a bang up job. The NV Emeri Sparkling Sauvignon Blanc from De Bortoli Wines in New South Wales is bottled refreshment. This is a wine for sipping on the hottest of summer days. It's super light-weight so you can knock back a couple glasses of crisp sparkling that has slight grassy and herbal flavors. The bubbles make it fun and will class up your afternoon of stoop sitting, lazy river inner-tubing, or hot, muggy day picnic-ing. Drink liberally with a cheese plate, fresh strawberries or a big hunk of fresh bread."

"Things I like about sparkling wines: *Most of them make you feel fancy and civilized and slightly decadent. *Many of them are cheap *They are very cold *They are full of bubbles *When you are drinking champagne, you look better. I always have chilled champagne in the house. The logic: If something good happens, we need cold champagne to celebrate. Thus, if we have cold champagne in the house, SOMETHING GOOD WILL HAPPEN. I understand this isn’t exactly “logic.” Failed logic, maybe. Superstition? Definitely. This illogical, witchcrafty domestic demand was born in Baltimore. I was freelancing and supporting a family, and when you are freelancing and supporting a family you are especially hungry for good things to happen. In addition, when you are freelancing and supporting a family the differences between logic and superstition tend to grow more … fluid. Anyway, one day something good happened. I forget what it was. At the time, I happened to have a chilled bottle of champagne. We celebrated. I concluded the chilled bottle of champagne was responsible for the shot of good news and ever since we’ve had the stuff on hand. I’ve torn through proseccos and cavas and champagnes. I’ve downed bubbly roses and reds, and bottles of effervescence from Napa and from New Mexico. I simply cannot resist sparkling wine. And now I’ve got sparkling Australian sauvignon blanc under my belt. I’ll be stocking my fridge with the stuff. I could taste the sauvignon blanc – grassy, a bit of pineapple and even kiwi – and it did not detract from the effervescence, which, let’s face it, is the most attractive thing about sparkling wine. It’s fizzy! And fizzy things aren’t supposed to be heavy or dense or especially complex. No, the sauvignon blanc added just a little something extra to the fizz, and it worked. My fridge now lacks a bottle of Emeri. But soon, it will hold a bottle or two. And something good will happen."

"The nose is cagey, with yeast tines hiding behind apple and melon fruit. Some nice minerality emerges in the mouth, along with a ripe green pea tone that slides into fresh apple on the medium finish. The mousse could hand around a bit longer, but the irresistible fruit here means that it probably won't be in your glass long enough to matter. Drink now with hor d'oeuvres."
