Vintage Conditions
Warmer than usual January nights lead to some varieities reaching maturity earlier than previous years. Late ‘07 rains & showers in January ensured vines in good health. A cooler February than usual allowed for good fruit development and varietal expression.
Winemaking
Fruit was selected by the winemaker and picked when both flavour and Baumé were optimum. Fermentation was on average for 7 days on skins at 22ºC - 25ºC with 100% malolactic fermentation.
