Salt complements and lifts the flavours of sparkling wine and most cold, acidic white wines. Unmatured salty, acidic goats cheese, or dishes containing it, are there to make your fizz look good. Try sparkling wine with a fresh goats cheese then put it up against a ripe brie, which is complex and alkaline, this should pretty much convince you for life.

From our Yarra Valley Estate View all the Acts in the range.
"It’s mediumweighted with a fine, smooth palate until the grippy, slightly puckering tannins kick in on the finish. A vibrant, terrific pinot for the price and one to drink over the next two years."
Jane Faulkner, The Age, Sydney Morning Herald, February 2013
89 Points - James Halliday
"Light straw-green; you simply don’t expect this level of varietal expression and mouthfeel at this price; tropical fruits, lemon/citrus and echoes of grass and herb are framed in a perfectly balanced interplay between a touch of sweetness and acidity."
